Blood orange, pink grapefruit and star anise fruit salad

This fruit salad is brimming with vitamin C, and looks so pretty.  Who can resist the temptation of anything decorated with little stars?  The addition of a star anise syrup to the citrus fruit adds a little bit of tinsel to the proceedings.  The wonderful aniseed flavour of the spice really helps lift the zing of the citrus.

The salad makes an aesthetically pleasing addition to any breakfast served in bed, for special occasions maybe.  It’s also a quick, easy and charming dessert to serve to last minute guests.

Ingredients:

  • 1 pink grapefruit
  • 2/3 blood oranges
  • 100 ml water
  • 3 teaspoons of castor sugar
  • 3/4 star anise pods

Method:

Put the sugar, star anise and water in a pan and bring to the boil.  Allow to simmer gently for about 15 minutes.  You aren’t looking for a very thick syrup here, more just an infused sweet water.  Meanwhile, segment and chop the fruit and add to a bowl.  Pour over the syrup when ready.
